Try My Hit Salmon Bowl Recipe from Our Writing Retreat

My writing group spent the weekend near Castle Rock Park in Idaho where we plotted all our next books!

Between the plotting, we did yoga, played games, and ate some amazing meals. Here's the recipe for my salmon bowl that's already been requested.

RECIPE: SALMON BOWL


Ingredients:

4 Skinless Salmon Fillets

4 C Rice (or Cauliflower Rice)

1 C Edamame

1 C Shredded Carrots

1 C Cucumber Cubed

1 Avocado Cubed


Teriyaki Marinade

1/2 C Coconut Aminos or Soy Sauce

1 T Sesame Oil

1/4 C Honey, Maple Syrup, or Brown Sugar

1/2 t Ginger

1 t Garlic Powder

1 t Sea Salt


Spicy Drizzle

1/4 C Mayo

1 t Siracha


Mix Teriyaki ingredients (or use store bought), and marinade salmon for at least two hours. Sear salmon on medium heat for 4-5 minutes per side.


Mix spicy drizzle. Spoon into sandwich bag and cut off small corner for drizzling.


Layer each bowl with rice, salmon, and veggies. Squeeze desired amount of spicy drizzle on top.
